What Are Greek Parisian Macaroons?

Our signature macaroons take the classic French macaron — those light, airy sandwich cookies made from almond flour and meringue — and infuse them with distinctly Greek ingredients like honey, pistachios, rose water, and citrus. The result is a treat that feels both timeless and entirely unique.

What You'll Need

For the Shells:

  • 1 ¾ cups (175g) almond flour
  • 1 ¾ cups (210g) powdered sugar
  • 3 large egg whites, aged at room temperature
  • ¼ cup (50g) granulated sugar
  • 1 tsp rose water
  • A pinch of cream of tartar

For the Greek Honey-Pistachio Filling:

  • ½ cup (115g) unsalted butter, softened
  • 1 cup (120g) powdered sugar
  • 2 tbsp Greek thyme honey
  • ¼ cup finely ground pistachios
  • 1 tsp lemon zest

How to Make Them

Step 1: Prepare Your Almond Flour

Sift the almond flour and powdered sugar together twice for smooth, lump-free shells. Discard any large pieces that don't pass through the sieve.

Step 2: Make the Meringue

Beat egg whites with cream of tartar until foamy. Gradually add granulated sugar and beat until stiff, glossy peaks form. Add rose water at this stage.

Step 3: Macaronage

Fold the almond flour mixture into the meringue in three additions until the batter flows like lava off a spatula in a thick ribbon.

Step 4: Pipe and Rest

Pipe 1.5-inch rounds onto parchment-lined baking sheets. Tap trays to release air bubbles. Rest at room temperature for 30–60 minutes until a dry skin forms.

Step 5: Bake

Bake at 300°F (150°C) for 14–16 minutes, rotating halfway. Cool completely before filling.

Step 6: Make the Filling

Beat butter until fluffy. Mix in powdered sugar, Greek honey, ground pistachios, and lemon zest.

Step 7: Assemble

Sandwich filling between matched shell pairs. Refrigerate for 24 hours before serving for the best flavor.
